This was my first omelet as I have been allergic to eggs all of my life. I never once thought to try a vegan omelet because I never knew that I could have an eggless omelet. This omelet was a fried tofu egg with caramelized onions, mushrooms, chives and cheese. This brunch item took me by surprise because I did not realize that it would taste delicious!
I definitely recommend this omelet to those of you wanting to try out something vegan!
